“Sustainability to us is kind of the first step in looking at how we should detail out our plan,” says Alex. “If it’s not going to be a sustainable plan from an operation side, then the operations side isn’t going to be following that.”
One strategy is using wood chips as a fuel source for a boiler system to generate steam for cheese and whey production. Another impressive sustainability strategy is using methane gas to generate electricity. Employee Cory Hernan walks through how the company produces energy from their wastewater and how Meister Cheese returns their former wastewater back to the water table. He says they’re producing about 8 cubic feet per minute of methane gas.
